Ingredients:
- 250 g short pasta (e.g., penne)
- 8 dl tomato sauce (store-bought or homemade)
- 1 zucchini, diced
- 1 eggplant, diced
- 1 red bell pepper, diced
- 1 green chili, chopped
- 3 tomatoes, chopped
- 3 cloves garlic, minced
- 2-3 tbsp olive oil
- 80 g feta cheese, crumbled
- 5 anchovy fillets
- 1 can tuna, drained
- Pinch of black pepper
- 2 tsp paprika
- 2 tsp herb seasoning
- Grated Parmesan or Grana Padano for topping
Instructions:
1. Heat olive oil in a skillet and sauté the diced eggplant over medium heat until softened and browned.
2. Add the diced zucchini and bell pepper to the skillet and cook for a few more minutes.
3. Stir in the chopped tomatoes and seasonings, and let simmer on low heat.
4. In another pan, heat olive oil, then add the green chili, garlic, and anchovy fillets. Sauté until the garlic is golden.
5. Combine the chili-garlic-anchovy mixture with the vegetable mix. Add the drained tuna and tomato sauce, stirring well.
6. Pour the mixture into a baking dish, then add the uncooked pasta and crumbled feta cheese, mixing evenly.
7. Cover the dish with foil and bake at 180 °C (350 °F) for 25 minutes.
8. Remove the foil, sprinkle with grated Parmesan, and bake for an additional 15 minutes.
9. Allow to cool for a few minutes before serving. Enjoy!
