A delicious and nutritious recipe combining noodles, kale, and Quorn for a satisfying meal, perfect for Meatless Monday! Preparation Time: 30 minutes

Ingredients:
- 250 g noodles - 200 g kale, chopped
- 300 g Quorn, diced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 onion, finely chopped
- 1 teaspoon ginger, grated (optional)
- Salt and pepper to taste
- Sesame seeds (for garnish, optional)
Instructions:
1. Cook the noodles according to package instructions. Drain and set aside. 2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sauté until soft.
3. Add the Quorn to the skillet and cook for about 5-7 minutes, until golden brown.
4. Stir in the chopped kale and grated ginger, sauté for about 3-5 minutes until the kale softens.
5. Pour the soy sauce into the skillet and mix well. Add the cooked noodles and combine all ingredients. Heat for a few more minutes.
6. Season with salt and pepper to taste.
7. Serve warm and garnish with sesame seeds if desired.
