A flavorful vegetable pasta that's perfect for a light lunch or dinner. This recipe combines fresh vegetables with pasta for a delightful meal.

Ingredients:

- 300 g pasta (e.g., penne or fusilli)
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese (optional)

Instructions:

1. Cook the pasta in salted water according to package instructions. Drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté for about 2-3 minutes until soft.
3. Add the bell pepper and zucchini, and cook for an additional 5 minutes until the vegetables are slightly softened.
4. Stir in the cherry tomatoes and spinach, and continue to cook for a few more minutes until the spinach has wilted.
5. Mix the cooked pasta into the vegetables and season with salt and pepper.
6. Serve immediately, garnished with fresh basil and grated Parmesan cheese if desired.
