Ingredients:
- 4 medium-sized potatoes - 2 tablespoons olive oil
- 1 tablespoon taco seasoning
- 1 onion
- 1 bell pepper

Instructions:
1. Peel and dice the potatoes into cubes. 2. Heat olive oil in a large skillet over medium heat.
3. Add the potato cubes to the skillet and fry for about 10 minutes, until they start to soften.
4. Chop the onion and bell pepper, then add them to the skillet with the potatoes.
5. Stir in the taco seasoning, salt, and pepper. Mix well.
