Ingredients:
- 1 onion - 2 garlic cloves
- 2 carrots
- 1 celery stalk
- 1 red bell pepper
- 1 zucchini
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1 tsp cayenne pepper (optional)
- 400 g canned lentils (e.g., green or brown)
- 400 g crushed tomatoes
- 500 ml vegetable broth
- Salt and pepper to taste
- Fresh parsley for garnish
For the Sweet Potato and Celery Sticks:
- 2 sweet potatoes - 1 celery stalk
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
1. Peel and chop the onion and garlic. Heat a splash of oil in a pot and sauté the onion and garlic until soft. 2. Add diced carrots, celery, and bell pepper. Cook for a few minutes.
3. Stir in the zucchini, cumin, coriander, paprika, and cayenne pepper. Mix well.
4. Pour in the lentils, crushed tomatoes, and vegetable broth. Bring to a boil, then reduce the heat and let simmer for about 20 minutes.
5. Season with salt and pepper. Garnish with fresh parsley before serving.
For the Sweet Potato and Celery Sticks:
1. Preheat the oven to 200°C (400°F). 2. Peel and cut the sweet potatoes and celery into sticks.
3. Toss the sticks in olive oil, salt, and pepper.
4. Spread the sticks on a baking sheet and roast for about 25-30 minutes, until golden brown and crispy.
