Ingredients:
- 400 g fresh fish (e.g., salmon or perch)
- 600 g potatoes
- 200 g vegetables (e.g., carrots and broccoli)
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh dill for garnish
Instructions:
1. Peel and dice the potatoes into small cubes. Boil the potatoes in salted water for about 10-15 minutes, until tender.
2. Meanwhile, cut the fish into portions and season with salt, pepper, and lemon juice.
3. Heat the olive oil in a pan over medium heat. Add the fish to the pan and cook for about 4-5 minutes on each side, until the fish is cooked through.
4. Chop the vegetables and add them to the pan during the last few minutes of cooking the fish, so they remain crisp.
5. Drain the boiled potatoes and serve them alongside the fish and vegetables.
6. Garnish with fresh dill before serving.
