Serving Size: 4 servings
Ingredients:
- 1 liter of water - 2 carrots, diced
- 1 potato, diced
- 1 onion, chopped
- 2 cloves of garlic, crushed
- 1 celery stalk, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 200 grams mixed vegetables (such as peas and corn)
- 2 tablespoons olive oil
- 100 milliliters cream (optional)
Instructions:
1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté for about 3-4 minutes until softened.2. Add the diced carrots, potato, and celery to the pot. Sauté for a few more minutes.
3. Pour water into the pot and add salt, black pepper, and thyme. Bring the mixture to a boil, then reduce the heat. Let the soup simmer on low heat for about 20 minutes.
4. Add the mixed vegetables to the soup and cook for an additional 10 minutes or until all vegetables are tender.
5. If using cream, add it just before serving and stir well.
6. Serve hot and enjoy the unique flavor!
