Serving Size: 4 servings
Ingredients:
- 500 g beef (cubed)
- 2 tbsp olive oil
- 1 large onion (chopped)
- 2 garlic cloves (minced)
- 3 carrots (sliced)
- 2 potatoes (diced)
- 1 bell pepper (diced)
- 400 g crushed tomatoes
- 2 dl beef stock
- 1 tbsp balsamic vinegar
- 1 tbsp fresh rosemary (chopped)
- Salt and pepper to taste
Instructions:
1. Heat olive oil in a large pot over medium heat. Add the beef and brown it on all sides.
2. Add the chopped onion and garlic, and sauté until softened.
3. Add the carrots, potatoes, and bell pepper, and cook for a few minutes.
4. Pour in the crushed tomatoes, beef stock, and balsamic vinegar. Stir well.
5. Season with rosemary, salt, and pepper. Allow the stew to simmer on low heat for about 30 minutes, until the meat is tender.
6. Serve the stew hot and enjoy with good music, like Guns N’ Roses.
