A delicious and easy Easter dish where vegetables roast to perfection in the oven.
Preparation Time: 1 hour 30 minutes
Serving Size: 4

Ingredients:

- 4 potatoes
- 2 carrots
- 1 parsnip
- 1 sweet potato
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh rosemary or thyme
- 4 whole garlic cloves

Instructions:

1. Peel and chop the potatoes, carrots, parsnip, and sweet potato into evenly sized pieces.
2. In a bowl, mix together the olive oil, honey, salt, black pepper, and herbs.
3. Add the chopped vegetables to the marinade and stir well to ensure all pieces are coated.
4. Place the marinated vegetables in a baking dish and add the whole garlic cloves.
5. Cover the dish with foil and bake at 180°C (350°F) for about 1 hour.
6. Remove the foil and bake for an additional 30 minutes, until the vegetables are tender and have a beautiful color.
