A hearty Finnish sausage soup with potatoes and carrots. Preparation Time: 35 minutes
Serving Size: 4 servings
Ingredients:
- 6 medium potatoes, peeled and diced
- 2-3 carrots, sliced
- 1 onion, chopped
- 1 blue sausage (about 10 pieces), sliced
- 1 tablespoon butter
- Chives, chopped, for garnish
- 1 beef stock cube
- Allspice, to taste
Instructions:
1. In a large pot, melt the butter over medium heat and sauté the chopped onion for a few minutes until translucent.
2. Add the diced potatoes and sliced carrots to the pot and stir well.
3. Pour in enough water to cover the vegetables, then add the beef stock cube.
4. Season with allspice and bring the mixture to a boil.
5. Reduce the heat and simmer for about 20-25 minutes, or until the potatoes and carrots are tender.
6. Stir in the sliced blue sausage and heat through for an additional 5 minutes.
7. Serve hot, garnished with chopped chives.
