A delicious and nutritious sausage soup made with fresh ingredients. Perfect for busy weeknights! Preparation time: 30 minutes. Serves: 4 Ingredients:
- 400 g sausage (e.g., beef or pork sausage)
- 2 large potatoes
- 2 carrots
- 1 onion
- 2 garlic cloves
- 1 liter of water
- 2 vegetable broth cubes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 2 tbsp oil
- Fresh parsley (for garnish)
Instructions:
1. Peel and dice the potatoes and carrots. Finely chop the onion and garlic.
2. Heat the oil in a large pot and sauté the onion and garlic until soft.
3. Add the sliced sausage to the pot and cook for a few minutes.
4. Add the potatoes, carrots, water, and vegetable broth cubes. Bring to a boil.
5. Season with salt, black pepper, and thyme. Let the soup simmer on low heat for about 20 minutes until the vegetables are tender.
6. Serve the soup garnished with fresh parsley.
