A hearty sausage soup inspired by traditional Finnish flavors. Preparation Time: 45 minutes
Serving Size: 4 servings
Ingredients:
- 1 large onion
- 1 liter of water
- 3 bay leaves
- 1 can of crushed tomatoes (400g)
- 4 tablespoons beef fond (red wine)
- Generous black pepper
- 300g sausage (e.g., chorizo or other spiced sausage)
- 2 potatoes
- 2 carrots
- Salt to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion. Peel and dice the potatoes and carrots.
2. Heat a little oil in a pot and add the onion. Sauté the onion until soft.
3. Add water, bay leaves, crushed tomatoes, and beef fond to the pot. Stir well.
4. Add the diced potatoes and carrots to the pot. Cook for about 10-15 minutes until the vegetables are almost tender.
5. Slice the sausage and add it to the soup. Season with black pepper and salt.
6. Continue to cook for another 10 minutes until the sausage and vegetables are fully cooked.
7. Remove the bay leaves and check the seasoning. Adjust with more salt or pepper if needed.
8. Serve the soup hot, garnished with fresh parsley.
