Serving Size: 4 servings
Ingredients
- 8 large potatoes - 1/2 liter of pureed tomatoes
- 7 dl water
- 2 yellow onions
- 1 tablespoon chili powder
- 1 tablespoon curry powder
- 400 g sausage (e.g., ring sausage or chorizo)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
1. Peel and chop the potatoes and yellow onions. 2. In a pot, heat 7 dl of water and add the chopped potatoes and onions. Boil for about 10 minutes.
3. Add the pureed tomatoes, chili powder, and curry powder. Mix well.
4. Slice the sausage and add it to the soup. Cook for another 10-15 minutes until the potatoes are tender.
5. Season with salt and pepper to taste.
6. Serve hot and garnish with fresh parsley if desired.
