This delicious sausage and vegetable soup is the perfect comfort food for cold days. It's easy to prepare and a tasty option for everyday meals. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 vegetable broth cubes
- 500 g mixed cooking vegetables
- 1 onion
- 2 garlic cloves
- 8 whole allspice berries
- 2 bay leaves
- Fresh basil (to taste)
- Approximately 300 g sausage (e.g., smoked sausage)
- 2 tablespoons tomato paste
- 200 ml pasta
- 1.2 liters water
Instructions:
1. Bring the water to a boil and crumble the broth cubes into the water.
2. Add the chopped onion and garlic, pasta, tomato paste, bay leaves, and allspice berries.
3. Boil for about 5 minutes.
4. Add the mixed cooking vegetables and sliced sausage.
5. Simmer for another 10-15 minutes, until the pasta and vegetables are tender.
6. Serve the soup garnished with fresh basil.
