A comforting sausage and potato stew packed with delicious vegetables, perfect for the whole family. Preparation time is about 1 hour. Serves 4.

Ingredients:

- 300 g sausage (lenkkimakkara)
- 2 carrots
- 150 g rutabaga (lanttu)
- 50 g celery root (juuriselleri)
- 5-6 large potatoes
- ½ leek
- 1 liter water
- 1 tsp salt
- Black pepper to taste
- Fresh parsley for garnish (optional)

Instructions:

1. Peel and dice the carrots, rutabaga, celery root, and potatoes into small cubes.
2. Slice the leek into thin rings.
3. Cut the sausage into 2-3 cm pieces.
4. Heat a large pot over medium heat and add the sausage pieces. Cook until they are slightly browned.
5. Add all the diced vegetables and the leek to the pot. Mix well.
6. Pour water into the pot and add salt and black pepper. Bring to a boil.
7. Reduce the heat and let the stew simmer on low for about 30-40 minutes, until the vegetables are tender.
8. Taste and adjust seasoning with more salt and pepper if needed.
9. Serve hot, garnished with fresh parsley if desired.
