Ingredients:

- 800 g potatoes
- 200 g salted mushrooms (blanched and squeezed)
- 2 onions
- 3 tbsp oil
- 1 l vegetable broth
- 2-3 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:

1. Peel and dice the potatoes into cubes.
2. Finely chop the onions.
3. Heat the oil in a large pan and sauté the onions until they are soft.
4. Add the potato cubes to the pan and sauté for a few minutes.
5. Add the blanched salted mushrooms, vegetable broth, and bay leaves. Bring to a boil.
6. Reduce the heat and let the stew simmer with the lid on for about 30 minutes or until the potatoes are tender.
7. Season with salt and pepper. Remove the bay leaves before serving.
8. Garnish with fresh parsley before serving.
