Ingredients

- ½ yellow zucchini
- ½ green zucchini
- 1 cucumber
- 1 red bell pepper
- 1 onion
- 3 fresh carrots
- 400 g sausage (e.g., chorizo or grilling sausage)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or basil) for garnish

Instructions

1. Wash and chop all the vegetables: yellow zucchini, green zucchini, cucumber, red bell pepper, onion, and carrots.
2. Heat olive oil in a large skillet over medium heat.
3. Add onion and carrots first, sauté for about 5 minutes until softened.
4. Add the zucchinis and bell pepper, sauté for an additional 5-7 minutes.
5. Cut the sausage into slices and add it to the skillet. Cook until the sausage is golden brown.
6. Season with salt and pepper. Lastly, add the cucumber and mix well.
7. Serve with fresh herbs on top.
