A delicious and quick pasta pesto that's perfect for a weeknight dinner or a tasty lunch. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 400 g pasta (such as spaghetti or fusilli)
- 200 g fresh basil
- 50 g pine nuts
- 100 g grated Parmesan cheese
- 2 garlic cloves
- 150 ml olive oil
- Salt to taste
- Black pepper to taste
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente. Drain and reserve a little cooking water.
2. Meanwhile, prepare the pesto: place the basil, pine nuts, Parmesan cheese, and peeled garlic cloves in a blender.
3. Blend the ingredients until smooth, then gradually add the olive oil while blending until the mixture is creamy.
4. Season the pesto with salt and black pepper.
5. Toss the cooked pasta with the pesto mixture. If needed, add a little reserved cooking water to achieve a desired consistency.
6. Serve immediately, garnished with extra grated Parmesan cheese and fresh basil.
