Ingredients:
- 800 g potatoes - 200 g salted mushrooms (blanched and squeezed)
- 1 onion
- 2 garlic cloves
- 2 dl vegetable broth
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Fresh herbs (e.g., parsley or thyme) for garnish
Instructions:
1. Peel and dice the potatoes into cubes. 2. Finely chop the onion and garlic cloves.
3. Heat olive oil in a large pot and sauté the onion and garlic until soft.
4. Add the potato cubes to the pot and sauté for a few minutes.
5. Stir in the salted mushrooms and vegetable broth. Bring to a boil, then reduce the heat.
6. Cover and let the stew simmer for about 25-30 minutes or until the potatoes are tender.
7. Season with salt and black pepper.
