A delicious berry and apple pie with a hint of lime.
Preparation Time: 1 hour
Serving Size: 8 servings
Ingredients:
- 250 g all-purpose flour
- 100 g sugar
- 125 g cold butter, diced
- 2 eggs
- 2 tablespoons cold water
- 300 g chokeberries
- 2 apples, peeled and diced
- 2 tablespoons potato starch
- Zest of 1 lime
- 2 tablespoons lime juice
- 100 g cold marzipan, grated
- 1 egg (for brushing)
- Raw cane sugar (for sprinkling on top)
Instructions:
1. In a bowl, mix the flour and sugar. Add the cold diced butter and rub until crumbly. Add the eggs and cold water, mixing quickly to form a smooth dough. Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
2. Prepare the chokeberries and peel and dice the apples. In a bowl, combine the berries, apple pieces, potato starch, lime zest, and lime juice.
3. Roll out 2/3 of the dough into a large pastry sheet. Line a springform cake pan with parchment paper. Place the pastry sheet in the bottom and up the sides of the pan. Prick the bottom with a fork. Spread the berry-apple filling on top.
4. Grate the cold marzipan into a bowl and mix in sugar and an egg. Pour this mixture over the pie filling. Roll out the remaining dough for the top and place it over the pie. Brush the top with beaten egg and sprinkle with raw cane sugar. Make a small steam hole in the top crust.
5. Bake in a preheated oven at 175°C (350°F) for about 45 minutes. Allow the pie to cool completely before removing from the pan.
