Ingredients:
- 2 tablespoons oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 3 carrots, diced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 liter vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Fresh herbs (e.g., parsley) for garnish
Instructions:
1. Heat the oil in a large pot over medium heat.
2. Add the onion and garlic, sauté for about 5 minutes until softened.
3. Add the carrots, potatoes, zucchini, and bell pepper to the pot. Cook for about 5-7 minutes.
4. Pour in the vegetable broth and add the salt, black pepper, thyme, and paprika. Stir well.
