Ingredients:
- 200 g chicken breast
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 100 g cherry tomatoes
- 100 g fresh basil leaves
- 100 g mozzarella cheese
- Juice of 1/2 lemon
- 1 avocado
Instructions:
1. Heat olive oil in a skillet over medium heat.
2. Season the chicken breasts with salt and black pepper. Cook the chicken in the skillet for about 6-7 minutes on each side until cooked through.
3. Halve the cherry tomatoes and add them to the skillet with the chicken. Cook for an additional 2-3 minutes.
4. Add the fresh basil leaves and torn mozzarella to the skillet. Stir until the cheese starts to melt.
5. Squeeze lemon juice over the dish.
6. Serve with the avocado, sliced.
