Creamy Mushroom Pasta is a delicious and filling meal that comes together quickly, making it perfect for a weeknight dinner.
Ingredients:
- 300 g pasta (e.g., tagliatelle or penne)
- 200 g fresh mushrooms (e.g., button or chanterelle)
- 1 onion
- 2 garlic cloves
- 200 ml cooking cream
- 50 g Parmesan cheese (grated)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve some pasta water.
2. Peel and chop the onion and garlic. Slice the mushrooms.
3. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing for about 3-4 minutes.
4. Add the mushrooms to the skillet and cook until they are soft and the moisture has evaporated, about 5-7 minutes.
5. Stir in the cooking cream and grated Parmesan cheese. Mix well and let simmer for a few minutes. Season with salt and pepper.
6. Add the cooked pasta to the sauce and toss to combine. If the sauce is too thick, add a little reserved pasta water.
7. Serve immediately, garnished with fresh parsley.
