This delicious vegetable pasta is quick to prepare and full of flavor. It's perfect for lunch or dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 150 g spinach
- Salt and pepper to taste
- 50 g Parmesan cheese, grated (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes.
3. Add the crushed garlic, bell pepper, and zucchini. Cook for an additional 5-7 minutes until the vegetables are tender.
4. Add the cherry tomatoes and spinach, and cook until the spinach wilts and the tomatoes soften.
5. Mix the cooked pasta with the vegetable mixture. If needed, add a bit of cooking water to prevent the pasta from being too dry. Season with salt and pepper.
6. Serve immediately, and sprinkle with grated Parmesan cheese if desired.
