A hearty Finnish cabbage soup with sausage, perfect for a comforting meal. Preparation time: 40 minutes
Serving size: 4 servings
Ingredients:
- 1 liter of water
- 1 bay leaf
- 10-12 allspice berries
- Approximately 500 g of green cabbage
- 1 red bell pepper
- 3-4 carrots
- 1 large onion
- 300 g of sausage (e.g., hot dogs or chorizo)
- Salt and pepper to taste
Instructions:
1. Peel and chop the onion, carrots, and bell pepper.
2. Slice the cabbage into strips.
3. Bring the water to a boil in a large pot.
4. Add the bay leaf, allspice berries, and salt to the pot.
5. Add the chopped vegetables and simmer for about 10 minutes.
6. Slice the sausage and add it to the soup.
7. Allow to simmer for another 15-20 minutes until the vegetables are tender.
8. Taste and adjust seasoning with salt and pepper if needed.
9. Serve hot with fresh bread.
