A hearty Finnish lamb rib soup with fresh cabbage and vegetables. Preparation Time: 1 hour 15 minutes
Serving Size: 4 servings
Ingredients:
- 0.6 kg lamb ribs, cut into small pieces - 1 kg fresh cabbage, chopped
- 2 carrots, peeled and sliced
- 1 onion, peeled and sliced
- 10 allspice berries
- 1 tsp salt
- 1 liter water
Instructions:
1. In a pot, heat a little oil and add the lamb ribs. Brown the meat lightly. 2. Add the sliced onion and carrots to the pot and sauté for a few minutes.
3. Stir in the chopped cabbage, salt, allspice berries, and water.
4. Bring the mixture to a boil, then reduce the heat.
5. Let the soup simmer gently for about 1 hour, or until the meat is tender.
6. Serve warm, and enjoy your hearty soup!
