Ingredients:
- 1 large cabbage
- 5 carrots
- 1 leek
- 3 bell peppers (various colors)
- 1 bunch of celery
Instructions:
1. Chop the cabbage, carrots, leek, bell peppers, and celery into small pieces.
2. Heat a little oil in a pot and add the leek. Sauté for a few minutes until softened.
3. Add the cabbage, carrots, bell peppers, and celery to the pot. Stir well to combine.
4. Pour in enough water to cover the vegetables. Season with salt and pepper to taste.
5. Simmer the soup on low heat for about 30-40 minutes, or until the vegetables are tender.
6. Serve hot and enjoy as a light meal!
