Homemade Mayonnaise

A classic emulsified sauce perfect for salads, sandwiches, and as a dipping sauce.
Preparation Time: 10 minutes
Serving Size: About 400 ml
Ingredients:
- 2 egg yolks
- 1 teaspoon mustard
- 1/3 teaspoon salt
- 1/4 teaspoon white pepper
- 1 tablespoon vinegar or juice from 1/2 lemon
- 3.5 - 4 dl oil
- (1 tablespoon water, optional)
Instructions:
1. Bring all ingredients to room temperature about half an hour before preparation to avoid curdling.
2. Separate the egg yolks from the whites and place the yolks in a bowl.
3. Add mustard, salt, white pepper, and vinegar or lemon juice to the yolks.
4. Mix the ingredients well together.
5. Gradually and slowly add the oil in a thin stream while stirring vigorously.
6. Continue adding oil until the mayonnaise is thick and fluffy.
7. If the mayonnaise feels too thick, you can add 1 tablespoon of water to the mixture.
