A delicious and hearty corn chowder perfect for a cozy meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g corn (fresh or frozen)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 potatoes, diced
- 4 dl vegetable broth
- 2 dl cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika (optional)
- Fresh herbs (e.g., parsley or cilantro) for garnish
Instructions:
1. Heat a bit of oil in a pot and sauté the onion until soft.
2. Add the minced garlic and sauté for another minute.
3. Stir in the diced potatoes and corn, mixing well.
4. Pour the vegetable broth into the pot and bring to a boil for about 15 minutes, or until the potatoes are tender.
5. Mix in the cream, salt, black pepper, and smoked paprika. Heat the soup for a few more minutes.
6. Serve the chowder warm, garnished with fresh herbs. Enjoy!
