A savory and hearty clam chowder with a kick from chorizo. Perfect for a cozy meal!

Serving size: 4 servings
Ingredients:
- 500 g clams (fresh or frozen)
- 200 g chorizo sausage
- 1 medium onion
- 2 garlic cloves
- 2 medium potatoes
- 1 can crushed tomatoes
- 4 dl fish stock
- 2 dl cream
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion, garlic, and potatoes.
2. Heat olive oil in a large pot. Add chopped onions and garlic, sautéing for a few minutes until fragrant.
3. Add chorizo sausage to the pot and cook until browned.
4. Stir in the potatoes, crushed tomatoes, and fish stock. Bring the mixture to a boil.
5. Reduce the heat and simmer for about 15 minutes until the potatoes are tender.
6. Add the clams and cream. Cook for another 5-7 minutes until the clams open.
7. Season with oregano, salt, and pepper to taste.
8. Serve the chowder garnished with fresh parsley.
