Ingredients:

- 4 cups corn kernels (fresh or frozen)
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 4 cups vegetable or chicken broth
- 2 cups cream
- 1 potato, diced
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:

1. Heat the butter in a large pot over medium heat. Add the chopped onion and sauté until soft.
2. Add the minced garlic and cook for an additional minute.
3. Stir in the corn kernels, diced potatoes, and broth. Bring to a boil, then reduce the heat. Let simmer for about 15-20 minutes, until the potatoes are tender.
4. Blend the soup with an immersion blender or regular blender until you reach your desired consistency.
5. Stir in the cream and season with salt and pepper. Heat the soup once more.
6. Serve the chowder warm, garnished with fresh parsley.
