Ingredients:
- 4 eggs
- 100 g cottage cheese
- 1 ripe avocado
- 50 g shredded mozzarella cheese
- 1 dl milk
- Salt and pepper to taste
- Butter for frying
- Fresh herbs (e.g., parsley or basil) for garnish
Instructions:
1. Crack the eggs into a bowl, add milk, salt, and pepper. Whisk the mixture together until well combined.
2. Heat butter in a frying pan over medium heat.
3. Pour the egg mixture into the pan and allow it to cook for a few minutes until the bottom is beautifully browned.
4. Add the cottage cheese and shredded mozzarella on top of the omelette.
5. Slice the avocado and arrange the slices on top of the omelette.
6. Cover the pan with a lid and cook for a few more minutes until the cheeses melt and the omelette is cooked through.
7. Garnish with fresh herbs and serve immediately.
