A delicious and spicy dish featuring firm fish or seafood, perfect for a weeknight dinner.

Ingredients:

- 500 g firm fish (e.g., cod or salmon) or 400 g seafood (e.g., shrimp)
- 2 tablespoons oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tablespoon fresh ginger, grated
- 2 teaspoons Madras curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 400 g crushed tomatoes
- 200 ml coconut milk
- Salt and pepper to taste
- Fresh coriander for garnish

Instructions:

1. Heat oil in a large skillet over medium heat. Add chopped onion and sauté until soft and translucent.
2. Add crushed garlic and grated ginger, cooking for an additional minute.
3. Stir in curry powder, turmeric, and cumin. Mix well and cook the spices for about a minute until fragrant.
4. Pour in the crushed tomatoes and stir. Let it simmer on low heat for about 5 minutes.
5. Add coconut milk and mix. Season with salt and pepper.
6. Incorporate the fish or seafood, cooking for about 10-15 minutes until the fish is cooked through or the seafood is opaque.
7. Serve the curry garnished with fresh coriander, and optionally, with rice or naan bread.
