White Chocolate Lingonberry Macarons

Delicious macarons that offer a sweet yet refreshing taste experience thanks to their white chocolate and lingonberry filling. Preparation Time: 1 hour
Serving Size: About 20-25 pieces
Ingredients:
- 100 g almond flour- 100-110 g egg whites (about 3)
- 200 g powdered sugar
- 4 tbsp granulated sugar
Filling:
- 1 dl whipped cream
- 50 g white chocolate
- 2 tsp lingonberry powder (Biokia)
Instructions:
1. Prepare the oven and baking sheets: Preheat the oven to 150°C (300°F). Line baking sheets with parchment paper.2. Make the batter: Combine almond flour and powdered sugar. Sift the mixture into a bowl.
3. Whip the egg whites: In a bowl, whip the egg whites and granulated sugar until stiff and glossy.
4. Combine ingredients: Gently fold the almond-powdered sugar mixture into the whipped egg whites. Mix lightly until smooth.
5. Pipe the macarons: Transfer the batter into a piping bag and pipe round, evenly sized circles onto the parchment paper. Let them rest for about 30 minutes until the surface is dry.
6. Bake: Bake the macarons in the oven for about 12-15 minutes. Allow to cool.
7. Prepare the filling: Melt the white chocolate and mix it with the whipped cream and lingonberry powder.
8. Fill the macarons: Place filling on the bottom of one macaron shell and gently press another shell on top.
9. Let them mature: Place the filled macarons in the refrigerator for at least an hour to allow the flavors to meld.
