Serving size: 4-6 servings
Ingredients:
- 500 g beef (cut into pieces)
- 2 tbsp olive oil
- 1 large onion (diced)
- 2 garlic cloves (minced)
- 3-4 potatoes (diced)
- 3-4 carrots (sliced)
- 1 bell pepper (diced)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp paprika
- 1 l beef broth
- 100 ml cream
- Parsley (for garnish)
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the beef pieces and brown them until golden brown.
3. Add the onions and garlic, and sauté until soft.
4. Add the potatoes, carrots, and bell pepper. Mix well.
5. Season the mixture with salt, black pepper, thyme, and paprika.
6. Pour the beef broth into the pot and bring to a boil.
7. Reduce the heat and let it simmer on low for about 40 minutes, until the vegetables are tender.
8. Stir in the cream and mix well. Let it simmer for an additional 5-10 minutes.
9. Serve warm, garnished with parsley.
