A delicious and nutritious vegan curry that combines jackfruit, chickpeas, and plenty of vegetables. Perfect for celebrating World Vegan Day! Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 can jackfruit (about 400 g) - 1 can chickpeas (about 400 g)
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 carrot, sliced
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 400 ml coconut milk
- 2 tbsp oil for frying
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
1. Heat the oil in a large skillet over medium heat. Add the chopped onion and sauté until soft. 2. Add the crushed garlic, bell pepper, and carrot. Sauté for about 5 minutes until the vegetables start to soften.
3. Stir in the curry powder, turmeric, and cumin. Mix well and cook for another minute.
4. Drain and rinse the chickpeas. Add them along with the jackfruit (drained from the liquid) to the skillet.
5. Pour in the coconut milk and mix all the ingredients well. Allow the curry to simmer on low heat for about 15 minutes.
6. Season with salt and pepper to taste. Serve the curry garnished with fresh cilantro.
