A creamy and delicious soup made with Jerusalem artichokes, perfect for a warm meal.

Serving Size: 4 servings
Ingredients:
- 1 kg Jerusalem artichokes
- 1 large onion
- 1 liter water
- Salt to taste
- 0.5 tsp white pepper
- 1 dl dried chanterelles
- 1 dl cream (optional)
- Fresh parsley for garnish (optional)
Instructions:
1. Peel and chop the Jerusalem artichokes and onion.
2. Heat the water in a pot and add the Jerusalem artichokes, onion, salt, and white pepper.
3. Simmer the ingredients on low heat for about 20-30 minutes, until the Jerusalem artichokes are tender.
4. Rinse the dried chanterelles and add them to the soup. Let it simmer for another 10 minutes.
5. Blend the soup with an immersion blender or a regular blender until smooth.
6. If desired, stir in the cream and mix well.
7. Serve the soup hot, garnished with fresh parsley if you like.
