Ingredients:

- 6 eggs
- 1 cup milk
- 1 cup shredded cheese (e.g., cheddar)
- 1/2 cup chopped bell pepper
- 1/2 cup chopped onion
- 1/2 cup fresh herbs (e.g., parsley or basil)
- Salt and pepper to taste
- 1 tablespoon olive oil

Instructions:

1. Preheat the oven to 180°C (350°F) and grease a muffin tin with olive oil.
2. Crack the eggs into a bowl and add the milk. Whisk together until well combined.
3. Stir in the shredded cheese, bell pepper, onion, and herbs into the egg mixture. Season with salt and pepper.
4. Pour the mixture into the muffin tin, filling each cup about 2/3 full.
5. Bake in the oven for about 20-25 minutes or until the muffins are golden brown and cooked through.
6. Allow to cool slightly before serving.
