Marshmallow Fluff Chocolate Muffins

Delicious chocolate muffins filled with fluffy marshmallow goodness. Best enjoyed fresh, but still tasty later on.
Preparation Time: 50 minutes
Serving Size: 24 regular-sized muffins

Ingredients:

- 4 eggs
- 4.5 dl sugar
- 2 dl whole wheat flour
- 2 dl all-purpose flour
- 1 dl cocoa powder
- 4 tsp baking powder
- 3 dl low-fat milk
- 2 tsp vanilla sugar
- 270 g butter or margarine, melted
- 80 g milk chocolate, roughly chopped
- 6 digestive biscuits
- 1.5 jars Marshmallow Fluff (213 g per jar)

Instructions:

1. In a bowl, measure the eggs and sugar, and whisk until light and fluffy.
2. In another bowl, sift the flours, cocoa powder, and baking powder. Gradually add the milk and dry ingredients to the egg mixture, mixing gently.
3. Stir in the melted butter and then fold in the chopped chocolate.
4. Line a muffin tray with paper liners and spoon about 1/3 of the batter into each liner. Add approximately a tablespoon of Marshmallow Fluff on top of the batter.
5. Crush the digestive biscuits into large pieces and sprinkle evenly over the muffins. Spoon the remaining batter on top to cover the fluff.
6. Bake in a preheated oven at 200°C (392°F) for about 20-25 minutes. The Marshmallow Fluff may bubble out slightly.
7. Let the muffins cool for a moment. Carefully remove the slightly cooled muffins from the tray using a knife for assistance and serve to your guests.
