Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 200 g fresh spinach
- 200 ml cream
- 1 onion
- 2 garlic cloves
- 50 g Parmesan cheese (grated)
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a bit of the pasta water.
2. Peel and chop the onion and garlic.
3. Heat olive oil in a pan over medium heat and add the onion. Sauté until soft.
4. Add the garlic and cook for one more minute.
5. Add the fresh spinach to the pan and sauté until wilted.
6. Pour in the cream and mix well. Allow to simmer for a few minutes.
7. Stir in the grated Parmesan cheese and season with salt and black pepper.
8. Combine the cooked pasta with the sauce. Add a bit of reserved pasta water if needed to achieve a creamy consistency.
9. Serve immediately, garnished with fresh basil if desired.
