Ingredients:
- 300 g pasta (such as penne or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 300 g cherry tomatoes, halved
- 200 g fresh spinach
- 100 g feta cheese, crumbled
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water until al dente. Drain and reserve a little cooking water.
2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until soft.
3. Add the crushed garlic and cherry tomatoes to the skillet. Cook for about 5 minutes until the tomatoes soften.
4. Add the fresh spinach to the skillet and stir until wilted.
5. Combine the cooked pasta with the skillet mixture and mix well. Add a little reserved cooking water if needed to make it juicier.
6. Season with salt and black pepper. Gently fold in the crumbled feta cheese.
7. Garnish with fresh basil leaves before serving.
