Plum Cheese Pie

This delicious plum cheese pie combines sweet ripe plums with a soft cheese filling. It's a perfect dessert or a delightful addition to your coffee table. Preparation Time: 1 hour
Serving Size: 8-10 servings
Ingredients:
- 200 g butter - 1 dl sugar
- 1 dl all-purpose flour
- 2 dl oat flour
- 1 tsp baking powder
- 1 egg
- 500 g ripe plums (or store-bought)
- 400 g quark (or ricotta cheese)
- 1 dl sugar (for the cheese filling)
- 1 tsp vanilla sugar
- 2 eggs (for the cheese filling)
- Pinch of salt
Instructions:
1. Melt the butter and let it cool slightly.2. In a bowl, mix the melted butter, sugar, and egg together.
3. Add the all-purpose flour, oat flour, baking powder, and a pinch of salt to the mixture. Stir until smooth.
4. Grease the bottom and sides of a pie dish. Press the dough into the bottom and up the sides of the dish.
5. Wash and halve the plums, remove the pits, and arrange them on top of the dough.
6. Prepare the cheese filling: In a bowl, combine the quark, sugar, vanilla sugar, and eggs.
7. Pour the cheese filling over the plums and smooth the surface.
8. Bake the pie at 175 °C (350 °F) for about 35-40 minutes, until the top is beautifully golden brown.
9. Allow to cool before serving.
