A delicious plum cream layer cake perfect for celebrations or special occasions. It's easy to make and served cold.
Preparation Time: 1 hour + chilling 4 hours
Serving Size: 12 servings

Ingredients:

- 200 g digestive biscuits
- 100 g butter
- 400 g quark
- 200 g heavy cream
- 100 g sugar
- 1 tsp vanilla sugar
- 300 g plums (fresh or frozen)
- 2 tbsp lemon juice
- 3 gelatin sheets
- 0.5 dl water

Instructions:

1. Crumble the digestive biscuits finely and melt the butter. Mix the biscuit crumbs with the melted butter.
2. Press the biscuit mixture firmly into the bottom of a springform pan and place it in the refrigerator.
3. In a bowl, add quark, heavy cream, sugar, and vanilla sugar. Whip the mixture well.
4. Soak the gelatin sheets in cold water for about 5 minutes. Heat the water in a saucepan and dissolve the gelatin sheets in it.
5. Incorporate the melted gelatin into the quark mixture, stirring well.
6. Pour the quark mixture over the biscuit base and smooth the surface. Let it chill in the refrigerator for about 2 hours.
7. For the plum layer: chop the plums, add lemon juice, and heat in a saucepan, stirring for about 5 minutes.
8. Pour the warm plums over the cold quark layer and return the cake to the refrigerator to chill for at least 2 more hours.
9. Cut the cake into pieces and serve cold.
