A delicious layered dessert perfect for any celebration.
Preparation Time: 30 minutes (plus freezing time)
Serving Size: 8 servings
Ingredients:
- 1 liter of your favorite ice cream (e.g., vanilla or chocolate)
- 200 g cookie crumbs
- 100 g melted butter
- 200 g licorice (e.g., salmiakki or licorice ice cream)
- 2 dl heavy cream
- 100 g powdered sugar
- 1 teaspoon vanilla sugar
- Toppings (e.g., chocolate shavings or berries)
Instructions:
1. Prepare the cookie crust by mixing cookie crumbs and melted butter together. Press the mixture firmly into the bottom of a cake pan.
2. Allow the cookie crust to firm up in the freezer for about 30 minutes.
3. Let the ice cream sit at room temperature to soften for about 10-15 minutes. Then spread the softened ice cream evenly over the cookie crust.
4. Melt the licorice and pour it over the ice cream. You can also add layers of licorice within the ice cream.
5. Whip the heavy cream with powdered sugar and vanilla sugar until stiff peaks form. Spread the whipped cream over the cake.
6. Decorate the cake with chocolate shavings or berries.
7. Let the cake freeze for at least 4 hours or overnight.
8. Cut the cake into slices and serve.
