A delicious and festive ice cream cake with layers of vanilla and chocolate ice cream, gingerbread cookies, and whipped cream. Perfect for holiday celebrations! Preparation Time: 20 minutes (plus freezing time)
Serving Size: 10-12 servings
Ingredients:
- 1 liter vanilla ice cream
- 1 liter chocolate ice cream
- 200 g gingerbread cookies
- 150 g chocolate (dark or milk)
- 2 dl heavy cream
- 50 g powdered sugar
- 1 tsp vanilla sugar
- Decorations (e.g., berries, nuts, whipped cream)
Instructions:
1. Take the ice creams out of the freezer and let them sit at room temperature for about 15 minutes to soften slightly.
2. Crumble the gingerbread cookies into a bowl and melt the chocolate using a double boiler or microwave.
3. Lightly grease a cake pan and pour a layer of vanilla ice cream at the bottom. Smooth the surface.
4. Sprinkle the crumbled gingerbread cookies on top and pour a layer of chocolate ice cream over it.
5. Repeat the layers as desired until all ice cream and gingerbread cookies are used, ending with a layer of vanilla ice cream.
6. Cover the cake with plastic wrap and place it in the freezer for at least 4 hours or overnight.
7. Whip the heavy cream, powdered sugar, and vanilla sugar until stiff peaks form.
8. Remove the cake from the freezer and decorate it with whipped cream and your choice of decorations.
9. Slice the cake and serve!
