Ingredients:
- 4 lightly salted herring fillets
- 1 red onion
- 1 carrot
Marinade:
- 1 cup vinegar
- 2 cups water
- 1 cup sugar
- ½ teaspoon salt
- 5 allspice berries
- 1 teaspoon coriander seeds
Instructions:
1. Start by preparing the marinade. Bring water, vinegar, sugar, salt, allspice berries, and coriander seeds to a boil in a saucepan. Let it boil for about 5 minutes, until the sugar dissolves. Allow the marinade to cool.
2. Peel and slice the red onion and carrot into thin rounds.
3. Layer the herring fillets, onion slices, and carrot rounds in a jar.
4. Pour the cooled marinade over the vegetables and herring, ensuring they are completely submerged. Seal the jar tightly.
5. Allow to marinate in the refrigerator for at least 24 hours before serving, preferably a few days.
