A delicious and traditional Finnish fish dish that is easily prepared in a spicy marinade. Perfect for serving at festive tables. Preparation Time: 1 hour + marinating time
Serving Size: 4-6
Ingredients:
- 1 tbsp whole black peppercorns - 100 ml vinegar
- 100 g sugar
- 1 tbsp whole mustard seeds
- Water (as needed)
- 2 bay leaves
- 2 tsp grated horseradish
- 4-6 herring (about 80 g each)
- 1 carrot
- 1 red onion
Instructions:
1. Measure the marinade ingredients into a pot: black peppercorns, vinegar, sugar, mustard seeds, bay leaves, and horseradish. 2. Add water as needed to cover the ingredients well. Bring the marinade to a boil and let it cool.
3. Clean the herring by opening them, removing the entrails, and cutting off the fins. Rinse the herring under cold water.
4. Peel the carrot and cut it into thin strips.
5. Peel the red onion and slice it into thin rings.
6. Place the herring, carrot strips, and onion rings into a deep dish and pour the cooled marinade over them.
7. Cover the dish and let it marinate in the refrigerator for at least 12 hours, preferably 1-2 days.
