A delicious and comforting carrot casserole perfect for special occasions.
Preparation Time: 1 hour 15 minutes
Serving Size: 6 servings
Ingredients:
- 1 kg carrots
- 5 dl vegetable broth
- 1 ½ dl arborio rice
- 2 dl water
- 5 dl oat cream (vegan option)
- 2 tbsp chia seeds (as an egg substitute)
- 2 tbsp syrup or honey
- 1 ½ tsp salt
- Almond flour for topping (gluten-free option)
Instructions:
1. Peel and grate the carrots finely.
2. In a pot, bring water to a boil and add arborio rice. Cook for 10 minutes.
3. Add the grated carrots, vegetable broth, salt, and syrup/honey. Let it simmer on low heat for about 20-30 minutes.
4. Mix the oat cream with the chia seeds that have been hydrated in water to form a gel.
5. Combine all ingredients well and pour the mixture into a greased baking dish.
6. Sprinkle almond flour on top.
7. Bake at 175°C (350°F) for about 1 hour, or until the top is beautifully golden brown.
8. Allow to cool for a moment before serving. Serve warm at Christmas dinner or anytime!
