Ingredients:

- 500 g carrots
- 2 dl rice
- 5 dl milk
- 2 dl cream
- 2 eggs
- 1 dl sugar
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- Butter (for greasing the baking dish)

Instructions:

1. Peel and grate the carrots finely.
2. Cook the rice according to the package instructions and let it cool.
3. In a bowl, mix the grated carrots, cooked rice, milk, cream, eggs, sugar, salt, cinnamon, and nutmeg.
4. Grease a baking dish with butter and pour the mixture into the dish.
5. Bake at 175 °C (350 °F) for about 45-60 minutes, until the casserole has a nice color and is set.
6. Let it cool for a moment before serving.
