Ingredients:
- 500 g carrots
- 1 dl coconut milk
- 1 dl rolled oats
- 1 dl vegetable broth
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
- 1 tsp curry powder (optional)
Instructions:
1. Peel and grate the carrots.
2. Heat the olive oil in a large skillet and add the grated carrots. Sauté over medium heat for about 5 minutes, until the carrots soften.
3. Add the coconut milk, rolled oats, vegetable broth, salt, black pepper, thyme, and curry powder. Mix well.
4. Allow the mixture to simmer on low heat for about 15 minutes, until it thickens.
5. Pour the mixture into a greased baking dish and smooth the top.
6. Bake in a preheated oven at 180°C (350°F) for about 30-40 minutes, until the top is beautifully golden brown.
7. Let it cool slightly before serving. Enjoy warm!
